Citation: On 4/27/2012 at approximately 21:00 hours I performed the tasks to verify the sanitation performance standards in the room where the retained product is processed and boxed. This room exits at one end into where the advanced meat recovery system and processing room is and at the other end into the bin cooler. The following conditions were observed: 1.) On the wall behind the boning table at the top of the stainless steel there is a build up of a dried green material. 2.) On the very front of the scale components that are located just to the right of the boning table there is what appears to be an area of dried blood approximately 3 inches by 4 inches in size, along with other smaller areas. 3.) On top and on the back of the scale and it's components, along with the shelf that they are located on, is a heavy buildup of dust on it's entirety, along with dried meat particles, unidentified black particles, an area approximately 4 inches by 4 inches in size of a dried out green material, and an area approximately 6 inches by 6 inches of a dried out brown material. 4.) On the wall opposite the boning table there are yellow lights that are used to see into the trucks that have a heavy buildup of black dust on them. 5.) The door switches have dried meat particles on them along with numerous other areas on this wall and throughout this room and it's doors. 6.) There is a buildup of a black/brown material on a large area of the door that leads into the bin cooler. QA person in charge Mr. [redacted] was notified and shown the non-compliances. Mr. [redacted] immediately contacted the sanitation personnel to begin corrective actions. No U.S. Retain/Reject tags were needed.

9CFR 416.1 states: Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

9CFR 416.4(b) states: Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
Continued failure to comply with these regulatory requirements could result in further regulatory or administrative action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
