Citation: 26 May 2011 at approximately 1300 while performing a scheduled 06D01 task I observed the following non compliance to the sanitation performance standards. 1) The protective sweep on the bottom edge of the metal door that leads from the raw processing area to the outside entrance way is falling off. This is a possible entrance for vermin. 2) The door that separates the kill floor carcass drip room from the raw processing area has black smears on the lower 12 inches of the door. The smears are from the hand truck dolly tires. 3) The swinging doors leading from the raw processing room to the stairwell is in an unclean condition with black smears and residue from floor overspray on it. This document serves as written notification that your failure to comply with the regulatory requirements of 9 C.F.R. 416.2(b)(3), doors and other openings must be maintained to prevent the entrance of vermin, and 9 C.F.R.416.4(b), cleaning non-food contact surfaces, could result in additional regulatory or administrative actions.


416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
