Citation: On 06-03-2011 at 1000hrs. I was walking through the cooler and noticed the following deficiency:
The table that the plant uses for Primal cutes of meat after they break a carcass had two pieces of butcher paper; this paper was used to lay the meat on. There was no meat on the table at this time, the paper had blood on it from previous use.
I checked the pre-op and operational sanitation forms and found no documentation for this.
There was no product on the table at this time and no retain tag was needed. The employee removed and cleaned the area before it would be used again.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
