Citation: On 14March2012 at approximately 14:00 hours I observed a noncompliance while conducting a HACCP Implementation Verification on productions of scrapple and pudding (uncured), Heat Treated-Not Fully Cooked-Not Shelf Stable products. Establishment records for the productions, produced on 12March2012, were not sufficient to demonstrate that the products had been produced within the critical limits of the “HEAT TREATED BUT NOT FULLY COOKED, NOT SHELF STABLE PRODUCTS (PUDDING, SCRAPPLE)” HACCP plan. This situation does not meet the regulatory requirements of 9CFR417.2(c)(6). I notified Mr. Mike Biser, Establishment Owner, of the noncompliance. I took a regulatory control action by placing US Retained tags B21152062, B21152063, B36921430, and B36921435 to the carts of finished product.

Regulation:

417.2(c)(6) Provide for a recordkeeping system that documents the monitoring of the critical control points. The records shall contain the actual values and observations obtained during monitoring.
