Citation: On 04 April 2012 at 13:30 hours while conducting an Operational Sanitation Standard Operating Procedure verification I observed a Sanitation Performance Standard noncompliance. The metal exterior door located on the south side of the cutting/ boning room was corroding at the bottom and the door frame on the non hinge side had holes from corrosion. The exterior door in the room containing the smokehouse was also observed to be in disrepair. The bottom of the mullion is worn and permitting the entrance of sunlight from the exterior. The condition of the doors and door frames doe not meet the regulatory requirements of 9CFR416.2(b)(1) and 9CFR416.2(b)(3) as they are in disrepair and create a potential entrance for vermin, respectively. I informed Mr. [redacted] of the noncompliance. Upon further inspection, no presence of vermin was observed and no product was affected.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.
