Citation: Today, at approximately 0800 hours while performing a scheduled 01B02 procedure, I observed the following non-compliance. During my pre-op procedure of the meat grinder, I observed meat particles down inside the hopper, as well as some small amounts of rust from the previous days operation. I took a regulatory control action and tagged the grinder with U.S. Retain Tag No. 24004071. Plant personnel immediately recleaned this item and presented it for reinspection. It was found to be acceptable and the retain tag was removed by inspection personnel. No product was involved, production had not started. 9CFR 416.4(a) states "All food-contact surfaces, including food-contact surfacesof untensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product."[redacted] was notified verbally and a review of available plant records indicated no action had been taken on this deficiency. I reviewed the NR file and found no recent non-compliance report of this nature.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
