Violation: 416.1, 416.2(b)(1)

Citation: At approximately 0730 hours while performing a scheduled sanitation performance procedure (06D01) the following noncompliance was observed. In the hallway from the processing area to the rear of the facility the ceiling tile are cracked and falling with some black mold looking substance. This is a violation of the afore mentioned regulation which states;"416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 416.2 (b) (1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions." No product was involved. A check of available plant records indicate no action had been taken on the deviation and a check of the noncompliance record show no recent noncompliance of this nature. Lou Sredy( owner), was informed of the noncompliance and the need for corrective action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
