Citation: Today, at approximately 0900 hours while walking through the carcass coolers I observed the following noncompliances. There is a set of swinging double doors between the two bays of the cooler which have fat, blood, and product residue from a previous days production. There is also three meat trees hanging in there that also have fat, blood and product residue from a previous days production. I took a regulatory control action and tagged the meat trees with U.S. Rejected tag # 6910837. These deficiencies are in violation of the above mentioned regulations instructing establishments to clean and sanitize both Non-food and Food contact surfaces as frequently as necessary to prevent the creation of an insanitary condition or the adulteration of product. A review of available plant records indicated no mention of these deviations and a review of the past noncompliances revealed no recent noncompliance of this nature. Lou Sredy (owner/operator) of this establishment was notified verbally and in writing with this document.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
