Citation: Today, 5/31/2012 at approximately 0730 hours while performing a Pre-op Review and Observation task, I observed the following non-compliances. The sausage stuffer located directly to the right of the double doors leading from the processing room to the hallway had meat and fat particles from the previous days production. U.S. Rejected Tag # A6910839 was applied. Mr. [redacted] was notified at which time he immediately cleaned and sanitized the piece of equipment, and presented it for re-inspection. After re-inspection, the equipment was found to be clean at which time the tag was removed and the above mentioned piece of equipment was released for use. There was no product involved, due to the fact that production had not yet begun. A review of available records indicated no action had been taken on these deficiencies and a review of the non-compliance record indicated no similar non-compliances within the past 90 days. Mr. [redacted] was notified verbally and in writing with this document.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
