Citation: At approximately 0745 hours, while performing procedure code 01B02, the following noncompliance was observed: On the slaughter floor, inside the knocking pen box, a piece of the wall approximately 2 feet in length and 6 inches wide is missing. The section missing is at a level with an animal with horns, could get stuck an injure itself. At the time of the findings, the knocking box was not in use. Regulation 416.2(b)(1) states: Establishment buildings, including their structures, rooms and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. I notified Mr. [redacted] Floor Manager of the noncompliance .

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
