Violation: 416.1, 416.2(e)(3), 416.4(b)

Citation: At approximately 0830 while performing scheduled ISP code 01B02 on the kill floor I observed the following non compliances: 1.) There is an accumulation of dust on the sloped ledge above the glazed tile wall around the perimeter of the kill floor. 2.) There is an accumulation of dust on the I- beam located next to the high legging platform. 3.) The sink at the high legging platform has no hot water. The drain is not connected and drains directly onto the platform and onto the area below. 4.)There are several water pipes located next to the knocking pen that are leaking. The pipe joints are wrapped in plastic and tape. 5.)The rear cooler that at this time is not used for product storage has an accumulation of unused equipment, empty boxes, hoses, wooden pallets, and electrical cords stored directly on the floor. The floor has an accumulation of dried blood, fat, and meat particles from the storage of the inedibles barrels. A check of the daily SSOP found that these deficiencies were not documented. No tag applied. No product involved. This is a violation of FSIS regulations 416.1, 416.2(e), and 416.4(b). I notified Mr. [redacted] orally and in writing with this NR of the non compliance.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(e)(3) Prevent adulteration of product, water supplies, equipment, and utensils and prevent the creation of insanitary conditions throughout the establishment;

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
