Citation: At approximately 0745 hours while performing SPS verification procedure in the boning cooler prior to the start of operations I observed the following deficiencies. The old overhead ammonia cooling unit has several areas of flaking paint on the underside of the unit. No product stored in the area of the cooling unit. There are several small cracks in the mortar joints between the glazed tile on the back wall of the boning cooler. The discharge drain pipe of the overhead cooling unit on the right side of the room is disconnected. The wall anchor for the discharge tube is rusted. The metal flashing around both doors leading to the box cooler has seperated from the wall exposing a gap of approximately 1/2 inch. The metal supports for the meat scale in the adjoining room is rusted. A check of the daily SSOP records and the Plant Improvement log found that these deficiencies were not documented. No tag applied. This is a violation of FSIS regulations 416.1, 416.2(b)(1), 416.2(b)(2), and 416.2(e)(2). Mr. [redacted] was notified orally and in writing with this NR of the noncompliance.
