Violation: 416.1, 416.2(b)(1), 416.2(b)(2)

Citation: On 2/28/12, at approximately 08:10am, while performing SPS verification procedure, I observed the following noncompliances in the following areas.
1. In the packaging room, the [redacted] cryovac machine, was seen to have peeling white plastic, on the right side of the vented door.
2. In the same packaging room, the floor to ceiling support beam, was seen to have frayed and/or torn duct tape, which is wrapped on the lower 1/3 of the square beam.
3. In the smokehouse staging area, the far left side window ledge, had numerous areas of flaking paint.
A check of the establishments daily SSOP records and the Plant Improvement log, show that none of the above mention deficiencies were notdocumented. Allareas stated above were non-product contact zones. Mr. [redacted] was notified both verbally and in writing with this NR.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
