Citation: At 0700 hrs on the 20th of July, while performing preoperational sanitation verification (01B02), I observed the following noncompliance: Cooler #1 * condensation on the cooling unit drip pan and above the doorway upon entering the cooler; Cooler #2 * condensation above the doorway upon entering the cooler; * one overhead fluorescent light has a broken plastic cover and bulb. [redacted] slaughter supervisor, was advised of the aforementioned noncompliance. The plant's preoperational sanitation monitoring form has no documentation reflecting the insanitary conditions. 9 CFR 416.4(b) states that non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. 9 CFR 416.2(d) Ventilation adequate to control odors vapors and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided. 9 CFR 416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. Subsequently, the condensation was removed from cooler #1 and #2. However, the broken bulb in cooler #2 was removed immediately.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
