Citation: At 0700 hrs on the 28th of September, while performing preoperational sanitation verification (01B02), I observed the following noncompliance: Stunning Area * rust on overhead I-beam; * accumulation of dust on steam pipe, hoist and exhaust fan guard over door to pens; * dirt on floor and wall in boiler room adjacent to the blood room. [redacted] slaughter supervisor, was advised of the aforementioned noncompliance. The plant's daily sanitation monitoring forms has no documentation reflecting the insanitary conditions. This is a failure of 9 CFR 416.1; and 416.4(b).

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
