Citation: At 0700 hrs on the 29th of September, while performing preoperational sanitation verification (01B02), I observed the following noncompliance: Cooler #4 * dry blood and residue on the underside of shelves on the stainless steel blood storage cart; * condensation on the cooling unit drip pan; Boiler Area * accumulation of dirt and debris on the floor adjacent to the USDA office; Dehairing Area * several large clumps of hair on the plastic bag covering the hoist above the dehairer. [redacted] slaughter supervisor, was advised of the aforementioned noncompliance. The plant's daily sanitation monitoring forms has no documentation reflecting the insanitary conditions. This is a failure of 9 CFR 416.1 and 416.4(b). Subsequently, the blood cart was cleaned and sanitized immediately. However, the remaining items were not.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
