Citation: On the 6th of January, 2011; at approximately 0700 hours, after plant's preoperational sanitation inspection prior to the start up of the operational, while performing ISP 01B02 verification, the following was observed: *2 white lugs on the rack had no identity of use located in the eviscerating area; *3 white containers along with 3 drainers had no identity of use located in the cooler 3; [redacted] slaughter supervisor, was informed of the noncompliance. Subsequently, two lugs were immediate labeled; however, the other containers are not. The establishment's preoperational sanitation monitoring form had no documentation reflecting the aforementioned noncompliance. This is a failure of 9CFR 416.3(c) and 416.1.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.3(c) Receptacles used for storing inedible material must be of such material and construction that their use will not result in the adulteration of any edible product or in the creation of insanitary conditions. Such receptacles must not be used for storing any edible product and must bear conspicuous and distinctive marking to identify permitted uses.
