Citation: At 0700 hrs on the 7th of June, while performing preoperational sanitation verification (01B02), I observed the following noncompliance: Stunning Area * flaking paint on the overhead steam pipe; * rust forming on the overhead beams. [redacted] slaughter supervisor, was advised of the aforementioned noncompliance. The plant's daily sanitation monitoring reports has no documentation reflecting the noncompliance. 9 CFR 416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 9 CFR 416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
