Citation: At 0700 hrs on the 20th of July, after the plant completed their preoperational sanitation inspection, while performing preoperational sanitation verification (01B02), I observed the following noncompliance: Cooler #3 * accumulation of dust on the cooling units and wall behind cooling units; * mold forming on the ceiling and cooling unit adjacent to the exit door; * black tape pulling away from overhead beams. [redacted] slaughter supervisor, was advised of the aforementioned noncompliance. The plant's daily sanitation monitoring reports has no documentation reflecting the insanitary conditions. 9 CFR 416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 9 CFR 416.4(b) states that non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
