Citation: At approximately 0715 hours on the 8th of November, whiel performing SPS verification, the following was observed: Cooler 2 *rust forming overhead panel at the entrance of the cooler; *rust on overhead rail switches; *rust on various areas of the cooler door adjacent to the door handle; Cooler 1 *rust forming overhead brackets and bar; Cooler 4 *rust on the overhead metal bar; *accumulation of dust on the back fins of the cooling unit and cooling fan; [redacted] slaughter supervisor, was informed of the aforementioned noncompliance. The establishment’s sanitation daily reports have no documentation reflecting to the aforementioned findings. 9CFR 416.1 - each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 9CFR 416.2(b)(1) - establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. 9CFR 416.4(b) - non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
