Citation: At 0600 hrs on the 23rd of April, after the plant concluded their preoperational sanitation inspection, whle performing preoperational sanitation verification, I observed the following noncompliance:
*rust and flaking paint on the overhead pipes and beams in the stunning a d dehairing areas.
[redacted] slaughter supervisor, was advised of the aforementioned noncompliance. The plant's daily sanitation monitoring reports has no documentation reflecting the insanitary conditions. This is a failure of 9 CFR 416.1 and 416.2(b)(2).

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
