Citation: On Tuesday 09/28/2010, at approximately 1450, the following was observed in cooler #1. There were two quarters of beef carcasses on the low rail and the refrigeration unit in the corner of the cooler above these two quarters of beef had an ice build up which extended beyond the edge of the drip pan underneath of refrigeration unit. The fan unit to the refrigeration unit was causing moisture to be blown on these two quarters of beef. Plant Management was notified immediately and the beef quarters were moved to another area. Plant Management immediately re-inspected these two quarters of beef for possible contamination and removed affected areas by trimming. No regulatory control action was taken. I then re-inspected these two quarters of beef and found them to be acceptable. This does not comply with regulation 416.2(b)(1). This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
