Citation: On Wednesday 11/10/2010, while performing pre-operational sanitation inspection on the slaughter floor, the following was observed at approximately 0730: The electrical conduit on the ceiling between the two lights near the back wall has a residue build up of a white and/or cream colored substance. Also observed, was a fat and grease build up on the lower two feet of the final wash stand. This build up was observed on the side of the final wash stand next to the wall. No product was involved and no regulatory control action was taken. [redacted] was notified of these observations. This does not comply with regulation 416.2(b)(2); 416.4(b). This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.


416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
