Citation: At 1045 hours while performing the recordkeeping portion of the 03C02 procedure the following noncompliance was observed. The cooler temperature log being used for CCP 4-M did not include the initials or signature of the establishment employee making the entry for each entry. On the form in question dated 10-26-10, 3 different cooler entries were made but only one initial was recorded on this form. The HACCP plan states under CCP 4-M that " [redacted] " 9 CFR 417.5(b) states "Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry." Each entry on the record dated 10-26-10 did not include a signature or initial of the person making the entry. No product was retained due to this recordkeeping noncompliance. No similar noncompliances were recently documented.

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.
