Citation: At 1105 hours while performing the 06D01 procedure the following noncompliance was observed. The scale hanging on the wall near the entrance to the processing room area from the lower carcass cooler area was observed to be starting to flake paint. No product was affected by this noncompliance. This item was rejected using US reject tag no B20194919. The light shields in the upper and lower coolers were observed to be starting to rust. Continuing into the inedible area the door handle leading into the smoke cooler was observed to have a dark colored product residue from a previous day's production. The inside edge of the cooler that seals it to the doorway was also observed to have a dark colored product residue from a previous production day in an area about 6 inches in length. Mr. [redacted] was notified of all of these observations. The door handle and the side of the same door leading into the smoke cooler area were cleaned. The handle was observed to be starting to rust after it was cleaned. US reject tag no. B20194916 was applied to this handle. No product was retained due to these noncompliances. 9 CFR 416.2(b)(1) states "Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. " 9 CFR 416.4(b) states "Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product." No similar noncompliance was recently documented.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
