Citation: At 1400 hours while performing the 04B04 procedure in the lower carcass cooler area of the establishment the following noncompliance was observed. A lamb carcass which was inspected on 1/5/11 was observed in the cooler. The lamb carcass was not marked with the official inspection legend containing the number of the establishment. Mr. [redacted] was immediately notified. The carcass was then stamped for identification. No regulatory control action was taken. No similar noncompliances were observed. 9 CFR 316.9(a) states "Each carcass which has been inspected and passed in an official establishment shall be marked at the time of inspection with the official inspection legend containing the number of the official establishment."

Regulation:

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.

417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.

316.9(a) Each carcass which has been inspected and passed in an official establishment shall be marked at the time of inspection with the official inspection legend containing the number of the official establishment.
