Citation: Generic E. coli Verification NR During the course of an FSA at Est. 9500 M, Dr. [redacted] EIAO observed the plant manager/owner’s wife collect a generic E. coli sample from a swine carcass by swabbing the belly, ham, and shoulder on 9/29/11. The written procedure and 310.25 state that the belly, ham, and jowl shall be swabbed. This is noncompliant with 310.25(a). This noncompliance is to be presented at the FSA exit meeting, April 3, 2012
