Citation: On Monday, January 17, 2011 at approximately 2330 hours, while performing ISP code 03H02, I observed the following noncompliance. I was reviewing the records for the Heat Treated, not shelf stable ( uncured Product) which was No Nitrite Bacon, which was produced on January 4, 2011. During my review of chill requirements I observed that the product temperature was observed to reach [redacted] F at 3:53 p.m and the product temperature was observed to reach [redacted] F at 10:28 p.m. which gives a time of 6 hours and 35 mins, which would be a failure of the Est. CCP2B ( chill for Uncured Product) The Preshipment review was signed and dated and there was no record of corrective action being taken by the Est. for the deviation from the CCP, as stated on the monitoring sheet, #5 under chill log states: (5) [redacted] " I informed Mr. [redacted] 2nd shift Supervisor of this noncompliance. This is a HACCP / corrective action noncompliance, the Est. failed to take corrective action when there was a chill CCP2B deviation which was in noncompliance with the Est. written HACCP plan for Heat Treated-Not shelf Stable which is dated 12 /18/10 and states on Page 10 (CCP2B) under critical Limits: [redacted] ) This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action as outlined in 9 CFR 500.4.

417.2(c)(5) Include all corrective actions that have been developed in accordance with § 417.3(a) of this part, to be followed in response to any deviation from a critical limit at a critical control point
