Violation: 416.2(b)(2)

Citation: On January 25, 2011 at approximately 0735 hrs while performing ISP procedure code 01C02, operational sanitation inspection, the following noncompliance was noted in RM #128- Holding Cooler: an accumulation/smear of black grease was noted on multiple areas of the cooler walls. In addition, dried organic residue from previous days' operation was noted on multiple areas of the cooler walls and the growth of an unidentified green substance was noted on the cement wall-floor juncture in the cooler. Upon further inspection, RM #129 and RM #130, Holding Coolers, were noted to be maintained in a similar appearance. The establishment coolers are an area where product is transported and stored and the aforementioned areas create an insanitary condition. At this time, no product was noted to be contaminated. Mr. Kill/Cut Supervisor, was notified of the noncompliance, insanitary condition, and failure to meet the Meat and Poultry Regulation 416.2(b)(2). (b)(6)(b)(7)(c)

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
