Citation: On June 23, 2011 at approximately 2152 hrs, while performing an SPS Verification, I observed the following noncompliance.
There was a significant amount of steam on the Cut Floor (room 139) because the room was being cleaned. Split swine carcasses were stopped on a rail going through the Cut Floor. Beaded condensation had formed on this rail, the supporting I-beam, and the light fixture. Approximately twelve carcasses were beneath this condensation. The condensation was dripping onto four of the carcasses. This is direct product contamination.[newline][newline]I immediately tagged the affected product with USDA retained tags # B31837620, B31837619, B31837617, and B31837611. [redacted] was notified of the insanitary conditions, the failure to meet the plants SSOP, and the noncompliance with 9 CFR 416.2(d), 416.4(d), and 416.13(c). The SSOP is signed and dated 1/24/11.

The carcasses were reconditioned according the plant policy. The condensation was removed from all overhead structures. The SSOP paperwork does not record any sanitation deficiencies prior to 2152 hrs.


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
