Citation: At approximately 1947 hours on 9/26/11, while walking through the Ham Staging Area, I observed the following noncompliance. Liquid was spraying from the A/C unit in the Ham Staging Area. This liquid was falling on 3 racks of raw pork shanks (~1556 lbs). This is direct product contamination. I immediately took verbal control of the affected area and tagged the affected product with US Retained tags B31837613, B31837612, and B31837631. Then I alerted [redacted] (Production Supervisor) of the noncompliance. This noncompliance was not documented in the plant's SSOP paperwork previous to being observed by FSIS inspection personnel. The affected product was reconditioned according to the plant's own SSOP. The plant has failed to meet the requirements of 9CFR 416.2(d), 416.13(c), and 416.4(d).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
