Citation: At approximately 2000 hours, I observed next to the Packing Table, sitting on the floor, six, 5-gallon Plastic buckets, both red and white in color. All of the Buckets contained a Liquid substance, and five of the six Buckets were labeled Inedible, the sixth Bucket ( white ) contained the same like substance as the other five, but the bucket was not labeled. I observed back at the Smokehouses next to the Ready to Eat packaging room, next to the door where you enter the Ready to eat Product cooler, three 5 gallon plastic Buckets, again both red and white in color, all three buckets contained Product and 2 of the 3 Buckets were labeled as inedible. The third Bucket was labeled as "edib only". I informed Mr. [redacted] 2nd shift Production Supervisor of the above Noncompliance. This noncompliance is in violation of the Meat and Poultry Regulation 416.3 (c).

Regulation:

416.3(c) Receptacles used for storing inedible material must be of such material and construction that their use will not result in the adulteration of any edible product or in the creation of insanitary conditions. Such receptacles must not be used for storing any edible product and must bear conspicuous and distinctive marking to identify permitted uses.
