Citation: At Approximately 2245 hours, in Rm # 121 ( Cured MFC ) I observed 4 racks of raw Turkey Bacon ready to be put into the Smokehouse. Upon a closer observation I observed one of the 4 racks had Product Residue left on the Trays which was directly above the boxes of exposed turkey Bacon. The Product is Chopped and formed and put into a Bag which leaves the top part of the Product exposed.The product is then set on Trays which are not a solid piece of Metal, but has bars with spaces between the bars. I observed approximately 3 pieces of Product residue, which was attached to these bars, was a darkish Brown in color and ranged in size from 1/4 inch up to an inch. I retained the one rack of raw Turkey Bacon with USDA retain Tag # B 24763836 and informed Mr. [redacted] 2nd shift Production Supervisor, verbally of the Noncompliance.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
