Citation: At approximately 0900 while performing a unscheduled 06D01, Operational Sanitation Task, I Inspector [redacted] found the following non compliance. While inspecting the slaughter floor at establishment 09581, I found there to be wall trim that has been broken off by the main door entrance from the office and the trim underneath the screen door on the kill floor is broken and disconnected from the wall. The cooler door, located on the kill floor leading to the cooler where the establishment hangs half carcasses, the hinges and handle has numerous spots of rust and the I beam located on the ceiling that the establishment has their hoists hanging from, which are used to lift animals, also has numerous spots of rust. 9CFR 416.2(b)(1) states " Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions." 9CFR 416.2(b)(2) states " Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions." David Livingston, Plant Owner, was verbally notified of these non compliances. This document serves as written notification that failure to comply with regulatory requirements could result in further regulatory or administrative action(s).

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
