Citation: At approx. 0710hrs while performing pre-operational sanitation I observed the following non-compliance. Employee's aprons (two) hanging in hallway entrance to kill floor were soiled. Aprons rejected with tag # B10 829291. Employee cleaned aprons before the start of operations. Reviewed the establishments sanitation form dated 11/10/2010 and found no mention of the non-compliance. Part 416.5(b) of the Meat and Poultry Inspection Regulations states: Aprons, frocks, and other outer clothing worn by persons who handle product must be of material that is disposable or readily cleaned. Clean garments must be worn at the start of each working day and garments must be changed during the day as often as necessary to prevent adulteration of product and the creation of insanitary conditions. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative actions.

Regulation:
