Citation: Prior to the start of my Pre-Operational Sanitation Inspection, I reviewed the plant records and observed that the only listed deficiency was the observance of flies in the offal room. This listing had corrective action recorded. There were no other listings. I then proceeded to perform my own inspection. I observed residue from previous usage and several blood spots on the metal tray that is used to prevent the beef and hog carcasses from touching the kill room floor. A plant employee immediately began to clean and sanitize this piece of equipment so no tags were applied. A metal roller tub located in the plant chill cooler that is used for collection of hog heads had two dead insects on the interior bottom. A plant employee immediately began to clean and sanitize the tub so no tag was applied. All other observed equipment and utensils were acceptable.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
