Citation: On July 7,2010 at Est.9646 at approximately 0730 hrs. while performing my pre-operational duties I found the following. 1. The two hand saws had a organic residue in the ends from the previous days production. 2. The plastic wheel that is part of the patty machine had pieces of fat on it from the previous days production. 3. The light above the patty machine had a broken shield on it . The shield also had several pieces of fat and organic material in it. I checked the pre-operational log and asked [redacted] if he found anything and none of those items were listed.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
