Citation: At approximately 7:15 a.m., after the plant had completed their sanitation equipment checks, I found the following deficiency: The large stuffing horn (approximately 10 inches in length) had material inside from the previous day’s use. The sanitation foreman, [redacted] who accompanied the inspector, immediately recleaned the stuffing horn to an acceptable condition. No control action was taken on the stuffing horn due to its being recleaned immediately.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
