Citation: On Thursday, 06/02/2011 while touring the facilities with Dr. [redacted] PHV and I the following noncompliance's were observed. 1.Doorways & Doors on the Slaughter floor, one leading to the inspection office the other leading to the outside premises. Both doors and frame work around the doors are starting to show signs of rust and peeling paint. 2.The stainless steel around the archway, frame work, leading from the retail area to the slaughter floor has got a blackish residue through out stainless steel covering. 3. The pipes and brackets above the evisceration table are showing signs of rust and peeling paint. 4.The stainless steel covering on the lower right wall of entrance in the cooler is coming away from the wall, creating a gap from the wall to the covering. At the time of the finding and to my observation no product or products were affected. Mr. [redacted] GM was notified of all of the findings. The above findings are a noncompliance according to the following regulations Meat & Poultry regulations: 416.2 (b) (1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to all for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. This will be documented under task code 06D01as a facility noncompliance.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
