Citation: While performing a record keeping review on Thursday 06/24/10 at 1100 hrs the following noncompliance was observed. There was a production of lard on 06/23/10 and according to the establishment HACCP records for CCP #6, which is for uncured cooked products, they state in there HACCP Plan that [redacted]. After reviewing the HACCP record for CCP # 6 there was no documentation of the lard that was produced on 06/23/10. This is a noncompliance according to the following Meat & Poultry regulations: 417.5(a) The establishment shall maintain the following records documenting the establishment's HACCP plan: (3) Records documenting the monitoring of CCP's and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment's HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative actions. I notified [redacted] HACCP coordinator about the finding and he informed me that a plant employee had documented all the requirements of CCP #6 on another piece of paper but forgot to transfer it to the HACCP document.
