Citation: Upon review of the official records for this establishment, of the sanitation procedures performed on the previous day; the following observation was made. The sanitation log has a check-off type of sheet for each day of operation that lists a heading for dates, times of performance, and signatures. This portion of the record was complete. The balance of the form has a listing of equipment checked and observations made of employees and areas. This portion of the form also has room for notations of corrective actions taken for deficiencies observed. This portion of the form was completed for checks and observations for the pre-operational sanitation portion only. The portion of this form that deals with the operational sanitation observations had a listing of the time performed only in the heading. The lower portion that has the check-off sheet had no notation for checks performed of the previous day (December 6, 2010) dealing with operational sanitation. There were no markings on any of the listed entries for areas or observations on the operational portion of this form. Sanitation forms are to be complete with all necessary information and observation listings prior to the next day of operation. As observed this record was not within compliance with the requirements of the Part 416 regulations for the recordkeeping requirements that are to be maintained by each establishment for monitoring of their SSOP.

Regulation:

416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOPís at the frequencies specified.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.16(a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOPís and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOPís as being responsible for the implementation and monitoring of the procedure(s) specified in the Sanitation SOPís shall authenticate these records with his or her initials and the date.
