Citation: Today, February 23, 2011, while reviewing the slaughter records for the slaughter performed on February 17, 2011; the following omissions were observed on the official records. On that date, the plant performed a treatment of the carcasses with a lactic acid spray as a microbial intervention as listed in their HACCP plan for this slaughter ISP code. This treatment was performed and directly observed by plant owner, [redacted] Jr. and plant foreman, [redacted] prior to the end of the days slaughter activities. In the review of the all slaughter records for this day, it was observed that the listing of this treatment and the verification activity associated with this procedure was not recorded on the official record. Records are to be maintained as listed in the plant HACCP program and with the requirements of the Part 417 regulations. At the time of this observance the record that had been observed was reviewed with Mr. [redacted] to show what had been missed in the entry.


417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
