Citation: At approx. 0815hrs I performed unscheduled task code 06D01 (Facilities & Equipment) and observed the following non-compliances. Several flies were observed in the hallway to the kill floor area. Further inspection also found them in the processing area near sausage stuffing area. Also observed dead flies inside two light shields with one light shield broken. One light shield has no protective covering for bulbs and the frames of these light shields appear to have smoke residue on them. These light shields are located in the sausage stuffing area. Mr. [redacted] Jr was notified of the non-compliances immediately and had employee work on this issue. Part 416.2(a) of the meat and poultry inspection regulations states: The grounds about an establishment must be maintained to prevent conditions that could lead to insanitary conditions, adulteration of product, or interfere with inspection by FSIS program employees. Establishments must have in place a pest management program to prevent the harborage and breeding of pests on the grounds and within establishment facilities. Pest control substances used must be safe and effective under the conditions of use and not be applied or stored in a manner that will result in the adulteration of product or the creation of insanitary conditions. Part 416.4(b) of the meat and poultry inspection regulations states: Non-food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:
