Violation: 416.1, 416.2(b)(2), 416.4(b)

Citation: At approximately 0830 hours while performing an unscheduled pre-operational sanitation check (01B02),of the slaughter floor the following sanitation performance standard violation,(06D01) was observed. In the sausage room the wall behind the sausage table and kettle has an accumulation of minerals or an undetermined substance that is staining the wall a darker color. No product was in the area or being produced at the time. This is a violation of the aforementioned regulations which states:"Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions. Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product." Joe Bingman (owner) was notified verbally and in writing with this document of the need for corrective action. A review of available plant records indicate no action had been taken on this deviation and a review of the noncompliance record show no recent noncompliance of this nature.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
