Citation: Today, August 24, 2011, at approximately 0815 hours, while performing an unscheduled 01B02 procedure I observed the following deficiences. The overhead window on the slaughter floor, which has a fan inserted in it, has cobwebs and dead flies in it. Also the weasand rod which is hanging on a hook to the left of the hand washing sink has small particles of fat and meat residue from the previous days production. Plant management was notified and the weasand rod was cleaned and sanitized immediately. There was no product involved since this was before the start of operations. A review of the available records indicated no entries from Mr. [redacted] 9CFR 416.4 (b) states "Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product".
