Citation: On August 17, 2010, during the food safety assessment, I observed a bloody residue leaking from the hide storage area into the dry storage area from the wall floor junction along the common wall. I reviewed the operational sanitation form and found no documentation for this noncompliance. I also reviewed the plant improvement form and found no documentation for the repair of the leaking wall. Mr. was notified of the noncompliance. Mr. took immediate action and no product was involved. In addition the leaking was noted on the plant improvement form. You have failed to meet 9CFR416.1 which states, "Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated" and 9CFR416.2 (b) (2) which states," (b) Construction. (2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions".

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
