Citation: This morning at approximately 0705 hrs. I performed scheduled procedure 01B02 to verify plant findings. I reviewed the plant sanitation form C-1 dated 7-9-2010 and all was recorded as acceptable (no deficiencies). In the boning/cut room I observed the following: The black drop/electrical cords located by the grinder, the product wrapping table, and the cord by the patty machine had fat/meat scraps and other build-up from previous operations. These cords are non product contact surfaces. [redacted] was notified of this deficiency and corrective actions were taken. The regulatory requirements of CFR 416.4(b) have not been met. Continued failure to meet regulatory requirements could lead to enforcement actions described in 9CFR 500.4

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(e)(1) Plumbing. Plumbing systems must be installed and maintained to: Carry sufficient quantities of water to required locations throughout the establishment

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
