Citation: At approximately 1030 hours, while performing an operational sanitation inspection in the cooler, I observed beaded condensation on the overhead steel beam and ceiling next to the cooler door leading to the packaging area. There was no product in the area. Management was notified and the condensation was immediately removed. No further regulatory action was taken.

There was no record of this noncompliance documented on the establishments sanitation form dated 07/22/2011. There are no similar noncompliance records on file.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
