Citation: Today at approximately 0815 hours while performing pre-operational inspection I observed the following non-compliance on the kill floor. The framework of the door leading into the bay area has dried on manure/ingesta from the previous day operation. The plant manager [redacted] observed this with me and there was no need to apply a control tag , as [redacted] took immediate corrective action. I reviewed the plant SSOP Form -001 dated 3-16-2012 and signed by [redacted] and saw no mention of this non-compliance. This document serves as written notification that failure to comply with regulatory requirements could result in additional regulatory or administrative action.


416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
