Citation: While performing PBIS task code 06D01 the IIC observed old sharpening stones, 3 short pieces of white string, a 3 foot long piece of red water hose, small "S" hook, and stones along south and north walls near head cabinet near slaughter floor area. No tags issued due to not a food contact surface. Clean up person can take care of this non-compliance during clean up. "This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administration actions."


416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
